Ingredients

Pesto:
♣ 1/4 cup chopped, fresh basil leaves
♣ 1-2 minced garlic clove
♣ 1/4 cup grated Parmesan cheese
♣ 60 ml dry white wine
Fondue:
♣ 150 ml dry white wine
♣ 1 tbsp white wine vinegar
♣ 450 g diced, softened Brie (no rinds)
♣ 2 tbsp cornstarch
♣ salt, pepper & chili powder
♣ Crispy white bread

Instructions

Fondue “Cheeeesy Pesto”
Put in a blender basil, garlic, Parmesan cheese and 60 ml of white wine. Blend well. Set it aside.
Take a medium pot,pour the rest of the wine together with the vinegar and let them simmer.
In a separate bowl, mix the cubed Brie with cornstarch. Gradually transfer the cheese mixture into the simmering whine and vinegar mixture. Add the pesto and mix well. Taste first, now add salt, pepper and chili powder.
After all the ingredients are warmed up and well mixed, transfer the mixture into your fondue pot.
In case your mixture is too thick, add more wine if it is too runny, add more cheese.
Light the fondue burner and adjust the heat to maintain the cheese fondue warm but not too hot.
Dip pieces of bread into your cheese mixture.
