Ingredients

♣ 2 garlic cloves, peeled,halved
♣ 300 g Gruyère cheese
♣ 200 g Vacherin cheese
♣ 100 g Appenzeller cheese
♣ 250 dl dry white wine
♣ 1 teaspoon cornstarch
♣ 2 tablespoons dry (not a sweet one) kirschwasser
♣ Bacon
♣ Farmhouse Bread / rye bread

Instructions

Fondue “Farmer Bread & Bacon”
Cut bacon into small pieces. Put in the pan and keep flipping and turning the bacon so that it browns evenly and roast to desired crispness. Lay the cooked pieces on a paper towel to drain.
Rub the inside of the pot with the garlic and place the pot on a medium flame adding 2 cups of the wine and the cornstarch (primarily dissolved in a little bit of wine). Add the grated cheese and stir consistently until all the cheese has melted and the fondue is smooth. You may want to lower the heat a bit – to keep the cheese from scorching. For safety, remove the pot from the flame and add the Kirschwasser. Stir. Return to the flame, add bacon and cook fondue till the smooth texture.
