Fondue “Vaudoise”
♣ 1 clove of garlic
♣ 800 g of grated or thin slices Gruyere cheese ( 28 oz)
♣ 4 teaspoons of cornflour
♣ 3,5 dl dry White Wine
♣ 1 teaspoon of freshly squeezed lemon juice
♣ 1 small glass of Kirsch
♣ Freshly ground pepper
♣ Freshly grated Nutmeg
♣ White bread
Abound an hour before serving Fondue “Vaudoise“ cut the bread into bite sized cubes.
Rub the Fondue dish with the clove of garlic where it can be left if you wish.
Mix the Gruyère with the cornflour in the fondue dish, add the white wine and lemon juice and bring to the boil while stirring continuously, until the cheese has melted.
Add the kirsch.
Season with pepper and nutmeg. Transfer the dish to a burner and let simmer.
Tip 😉 Place a cube of bread on your fondue fork & dip into the fondue & stir around & eat directly. Be careful not to burn your mouth 😉
